Seems like my theory was correct:
Seemed like the most obvious reason right when I heard this story. Manti actually was the victim of a hoax. He was embarrassed about the stigma of having an online-only relationship, and simply lied to people about actually meeting her so that people would not judge him.
The simplest explanation is usually the correct one.

Trying to keep up with the lies creates confusion. There are so many. It would take me an entire day to outline all the lies and inconsistencies there are so many.

I haven't kept up with specific timelines as it relates to her, but when did she supposedly stop talking? Was she able to start talking again after she stopped for whatever reason?
