Since you said no picking Bama...
Texas. Because of a few reasons.
1. Away game against a top 10 opponent
2. That opponent happens to be Texas who the media are fawning over (same with TAMU)
3. Shutting out an offense like that (I expect them to finish top 25 in scoring and total offense), will put a stamp on our offense being legit elite.
It makes a huge early season statement and Texas's QB is a Heisman level dude not like Miami's poor QBs that cost them so many losses last year. I expect Texas to still finish with 10 or more wins.

Texas. We owe them one for that Cotton Bowl loss.

im just saying
if we shut out Alabama the last 3 years, we'd have two ties on the record

Why would anyone care? Just win.

Definitely Bama. Would be the greatest day of all time to beat them like 30-0

Texas without a doubt. A shutout win on the road against a team that will be highly ranked early in the season will shoot us up the rankings. Keep winning and we stay up there, just behind those bastids from Gumpland and Clemson.

From a tone standpoint shutting out Texas at their place on national TV is a pretty big statement
