Am I missing something here? Why would the NCAA make a team that is forced to play a game later in the week due to weather have to turn around and play a day earlier?

No committee will decided who gets to go to Omaha. They will still play the game.

The LSU baseball team’s wait to play its first game at the College World Series since 2009 will last until Sunday night.
Pairings and game times for the 67th CWS at TD Ameritrade Park in Omaha, Neb., were released late Monday night, giving qualifying teams a clearer idea of their path to the national championship.
LSU and UCLA — the first two teams to qualify for the CWS, both clinching super regionals Saturday — will play at 7 p.m. Sunday in the final game of the event’s opening round. LSU, the No. 4 national seed, will be the home team. The game will air on ESPN2.
Mississippi State plays the first game of the CWS at 2 p.m. Saturday, its opponent either No. 3 seed Oregon State or Kansas State, whose decisive Game 3 of the Corvallis (Ore.) Super Regional was late Monday night. Indiana and Louisville meet at 7 p.m. Saturday.
The other Sunday game features N.C. State against the winner of the North Carolina-South Carolina super regional, which concludes Tuesday.
If LSU beats UCLA on Sunday, the Tigers would play the winner of the other Sunday game at 7 p.m. Tuesday. If the Tigers lose, they will play the loser of the other Sunday game at 2 p.m. Tuesday.
