Coaching. Gary Patterson and Art Briles are great coaches. Chris Petersen was a great coach at Boise St, and their new coach apparently is too (can't remember his name). George O'Leary took a while to get things running at UCF, but he's done the same.
247 recruiting rankings are nice, but that doesn't determine how good a team can be.

Bowls are unpredictable, but Ole Miss was coming off the big W against State in the Egg Bowl and they wanted to prove that they were still a really good team against a highly ranked TCU team. And TCU was obviously still motivated getting left out of the playoff. TCU made them look like a high school team. Ole Miss is obviously not as good of a team after losing Treadwell, but they weren't nearly as bad as TCU made them look. That was shocking. Plus, Ole Miss usually does really well in bowl games.
Also, I hear what you're saying about some games meaning nothing, but when you lose, it is something. It means that you have another L added on to the end of your record. I guarantee you that Les is feeling like it means something about right now.

The big 12 sucks, Baylor sucks. TCU should be competing for big 12 titles with ou and Texas. Those are the only schools in that conference that out recruit TCU every year.

The argument about Texas talent being the reason why Baylor and TCU are playing well does not hold water. That same talent was here when Baylor sucked for most of its existence. And if talent is so good here then explain why Texas Tech has generally sucked until they got a good coach. And a&m is rarely a legit championship contender. Coaching is the reason for the success.

There is more talent out there than ever before. And with the spread, all you need is a few difference makers and some hungry guys on D. With the expansion of televised cfb, smaller schools are also getting more money and building up their programs.

I think Patterson is a good coach, but they are the 3rd most talented team in that conference on paper.
On paper LSU is there with auburn, uf, uga and behind bama. Every once in a while tamu, tenn and ole miss will sneak in with a good class.
