Have to attend a high tea with my wife at lunch time but having my own smoked pastrami for dinner -- smoked meat sammiches Montreal style and some good whiskey later this evening.

No brine just kosher salt and black pepper. Wagyu has enough marble no need for a brine.

For me, it just taste a little richer from aging an extra year in that "another second barrel". Only 90 proof and more desert-like with some cocoa and extra oak spice taste. Definitely an end of the night choice. For the money and available, their double oaked is probably the best bang for the buck, but I currently have a couple of bottles of the double double.

Starting and finishing with Early Times. Thinly sliced fried mudcat, shrimp hushpuppies, red beans & rice, cole slaw with a Dixie beer.
