Yes, Charles McClendon went on to be one of the most loved and respected men in football. He couldn't beat Alabama, but he matches Les Miles in professionalism, character, honesty, and integrity. Depends what you mean by "better".

Stud is the oline coach at Ohio St right now. Currently is a better job that LSU oline coach.
He had taken the interim OC job after Krafthorpe stepped down for health issues. Not sure if it counts because he was fired from OC job not oline.

I am pretty sure this is true of any major school. I cannot think of any coach fired for not being successful enough at one major school going on to have a stellar career at another major school. Perhaps Gene Stallings (failed at A & M) but no one since.

Why is this discussion limited to LSU coaches?
Fired CFB coaches in general don't typically go on to have illustrious careers.
Though the fabric that makes up a winning program is multifactorial, usually a fired coach is deficient in some area and they fall by the wayside.
Even a coach that manages to shore up his deficiency to an extent is far behind his contemporaries that never had that deficiency to begin with and are further evolved in their coaching growth. I believe that fired coaches just never have the ability to "catch up" in ability to their opponents, hence why they continue to struggle. You can "learn your lesson" from your previous failure but often times it's too little too late.

Yeah the only real example I can think of is Mike Leach doing a pretty good job at Washington St. At least considering the state they were in when he got there. And I guess Harbaugh got fired from the 49ers. But both of those firings were not because they were getting bad results on the field

Even Mike Leach wasn't fired for performance. So I don't know if he really qualifies as a good example.
There aren't many examples of coaches in general that are fired due to poor performance and become winning coaches.

Arkansas fired Lou Holtz, who later went on to win a NC at Notre Dame.

Pete Carroll, Saban (dolphins), Spurrier. There's a lot of those examples. Don't give me the crap about Saban wanting to leave the Fins either. He was shown the door.

Oh, there are plenty of coaches who got shitcanned from NFL jobs and later had success in college. Bill Arnsparger is one as well. Also the aforementioned Lou Holtz.
