Stephen Peterman was a favorite of mine. He was brought in as a TE. He played DE as Fr. He hen moved to guard and gave up 3 sacks in 3 Years. He was a rock on the 2003 natty team. I believe he played at St. Stanislaus in HS

I know we had some guys come in as RB and move to LB but I can’t think of who they were.

Seems like lot of the guys from the Saban and early Miles teams switched positions. I can think of multiple players from the 01, 03 and 07 teams where this was the case. To answer the OP’s question I always feel like Lavar Edwards was under appreciated at DE and is definitely up there as one of the most random LSU players of all time to score multiple defensive TDs.

Webster came to mind first, then Reed. I got to watch Reed destroy @Bama with Rohan Davey lighting it up!! It was magic.

In the same class Marquise Hill looked to be a DT - or potentially even OT - out of high school (6'6" or taller, around 300 lbs), ended up playing DE in Saban's scheme at the time.

The Russell Shepperd not throwing a pass may be mostly myth.
I do not think the entire coaching staff missed out on the possibilities here IF RS was capable of reliably throwing a pass to a wide open receiver in a college football game.
He was a heck of an athlete, though.

Eric Martin and Kevin Faulk. I think Tommy Casanova was a RB before he became a legendary DB.

Kevin Faulk was a QB in high school and was recruited by Gerry DiNardo to play QB in Gerry’s I-Bone offense.

Webster is the one that got it started at CB. Coop was a fantastic coach.
