There is not RV parking available via Minute Maid Park. You might be able to purchase multiple spots from a private owned lot but it won't be cheap or might not even be doable. Also be advised the Rockets are at home vs Detroit Friday night and the Dynamo open their season Saturday night. Toyota Center is probably far enough where there won't be a ton of disruption but it's still walking distance. And on Saturday, BBVA Stadium is all of 3 blocks from MMP and share some of the same parking lots.
