This might sound crazy, but there is a possibility (however slim it may be) that Kelly is actually being completely honest here. Long post ahead..
The “draft grades” that coaches discuss with players come from the NFL’s College Advisory Committee (CAC). The head coach (or player personnel director) submits the request for evaluation of draft-eligible underclassmen to the CAC, and the CAC gives them one of four grades:
1. Potential to be drafted as high as first round.
2. Potential to be drafted as high as second round.
3. Potential to be drafted as high as third round; recommend staying in school.
4. Recommend staying in school.
Coaches cannot submit requests for evaluation until after conclusion of the regular season. So that would have been 11/27 at the earliest. However, we played in the SECCG the next week and it’s entirely possible the request wasn’t submitted until 12/4. Boutte announced he was returning on 12/5.
The CAC accepts requests for evaluations until 1/2; however, they say they only guarantee that the evaluation will be returned by the deadline for underclassmen to declare (1/16) if the request is received by 12/16. So the vast majority of requests are being submitted from 11/27 through 12/16, and the CAC says it could take up to a month to return an eval.
It seems, then, entirely possible that Boutte didn’t have his draft grade from the CAC yet when he announced his return on 12/5. Even if LSU submitted the request immediately after the aTm game, what are the chances that the CAC responded, Kelly reviewed the grade with Boutte, and Boutte had the necessary discussions with his family by 12/5?
Keep in mind we played a conference championship game in Atlanta on 12/3. I highly doubt that Kelly would have discussed the eval with Boutte before the game, even if he did have it back from the CAC.
So again.. it’s possible that Kelly’s telling the truth. Maybe Kayshon jumped the gun when he announced his return, then later received a first/second round grade from the CAC. Maybe they actually did discuss it at length recently, and maybe Kelly did tell Boutte that he thought going pro was the right decision.
Or maybe it’s all bullshite, but I think it’s worth considering during an otherwise bizarre turn of events.

What difference does it make “why he left?”
He did not contribute this year and there was little chance next year would be any different. Younger, better receivers were on their way and the current receivers played better than he did. Time for him to go and it just took a while to sink in.

On the other hand, we have you, an anonymous poster on tiger droppings, claiming to have received a text from a player on the team declaring that Boutte suddenly changed his mind about going pro today because Jayden Daniels announced he was coming back several days ago. Just ignore the earlier announcement by LSU as the timing is just coincidence.
Which seems more likely?
