Put me down for okra in a seafood gumbo and no okra in a chicken & sausage gumbo. Only because I don't like okra in a chicken and sausage gumbo. An authentic gumbo should include okra though, no matter what type you are making.

Amen to that. I only put homecooked okra, which I keep in freezer until needed. NO slime and the okra adds a great flavor. Thats my 2 cents. No posts account was a lurker for a long time.

yeah...okra...take it or leave it....ITS IN THE ROUX & additives down here....

and the bottomline...we know good flavoring and cooking...and we expect it.....its very different in other areas of the country.....hell. alot of the Fla seafood isnt very good....

I agree. I love 'em on the half shell and fried but not in seafood gumbo. I use crab and shrimp only. I put both in at the end because I hate them when they're overdone. I also leave out the vinegar; it's great for sausage and chicken gumbo but nix for seafood.

Everything about this thread makes my heart happy. My wife (from DC/Maryland)enjoys good food but she can't quite relate to really being passionate about cooking and food. I've tried explaining it but that's just not how things were in her house. As a result, I do all of the cooking because I like good food.

When we first moved into together she would ask me "why does everything have to be so over the top?". My reaction was basically, what the hell are you talking about, this is just par for the course.

Maybe so, but the problem is no one for sure knows exactly what authentic gumbo is supposed to be. We do know that it was (and is) an economical meal. While others used okra, some used file (fee-lay) as a thickener, and the roux was merely for flavor.

Personally, I use okra for seafood and none for chx, sausage or turkey gumbo. I have a bottle of file but never use it.

Just a little bit of info since okra and gumbo has grown to be a big part of this thread.

Gumbo is Okra.... The word gumbo was brought over from Africa, it is the Angolan word for Okra. Okra was used to thicken soup like foods.

Thought ya'll might like a little Louisiana history trivia this morning.
