Heating the oil does oxidize it and makes it more harmful but the omega 3:6 ratio is what makes seed oils inflammatory in the first place.

I skimmed this so I may have missed it, but it’s just a description of the mechanism and the potential outcomes. It doesn’t provide data other than correlating seed oil consumption and various diseases.

Blog post is the same thing. There’s some data that shows mechanisms where linoleic acid is harmful, but I think the outcome data when randomly tested says otherwise. Check out that video I posted on the last page. It highlights a lot regarding effects on inflammation.
I’m not making the case that seed oils are great for you. They’re usually packaged in ultra processed food that’s downright awful. I’m just saying they aren’t the villain that they’re made out to be. I think a lot of our health issues come down to over consumption and lack of exercise. I bet if most people tracked calories or steps, they would be shocked at how much they’ve underestimated each.

It is almost impossible to buy good salad dressing at a normal grocery store. I make my own bleu cheese dressing sometimes with just Greek yogurt and bleu cheese. My mom does an awesome olive oil and parm dressing and we use just olive oil and vinaigrette a lot.

I unloaded many many 40lb cubes of beef fat and cottonseed oil from 83-88.
Not sure when the switch from 100% tallow and the other switch from the blend to pure seed oil.

I don’t think people were saying let’s poison everybody. It’s more like how can we make more product cheaper.

Animal fats are very likely to be better than seed oils for your health; however, the impact isn’t even close to exercise and maintaining a healthy weight. So, if I was giving advise it would just be eat in moderation and exercise as much as possible. You can let the other stuff dictate what you use in your home cooking, but going overboard is going to up your stress level and likely have almost zero impact on your healthspan.

It’s possible to eat a diet with no oil or butter for cooking.
I eat cowboy with baked ribeye and pressure cooked white beans. No cooking fat.
