Deliberately off the wall recommendation here: Factorio.
The premise is that you are a lone astronaut on an alien world and have to build a rocket to get off. To accomplish this, you have to collect resources to build up an economy up to the point if buildibg rockets.
While in theory you can build most of what you need by hand, the realities is that it’s too much for one to do. The solution? Bring out the Industrial Age on this virgin planet and build factories to automate the extraction, refining, and processing of raw materials.
The catch? Depending on your energy sources, you will generate pollution. And any of the native fauna that deals with these offensive odors will hunt down the source and seek to destroy it.
So you end up in an arms race with the planet, the technology level you can supply and sustain vs how powerful the hostiles are (which are based on a formula determined by time the game is played, how much pollution generated, and how many nests of creatures have you destroyed

I'll second the Stardew Valley suggestion. Very charming, relaxing game that's also deceptively deep and can give you a ton of hours

Try Subnautica. I didn't think I'd like it much, but it's been one of the better games I've seen the past few years.

I definitely recommend it. It has the scary element, but it's not horror. Good story line, beautiful graphics, nice progression.
No spoilers, but two things to be on the lookout for when collecting: Cuddlefish eggs and time capsules.

Yes. Any laptop without a dedicated(separate nvidia or AMD) GPU will struggle with a game that is moderately graphics intensive. You can play some games just fine, but Witcher 3 is not one of those.

Subnautica is one of the best early access games I ever played. In fact, it is the only one I would have actually recommended even in early access. Lots of fun if you like survival / building games.
Waited forever to jump into Stardew Valley and I was glad I finally did. I've played that through a few times to the tune of several hundred hours.
