Went to recover a box for some guy on the side of the road, killed by drowners very quickly. How do you even level up? I must've missed that part of the tutorial.
I've been able to play about 30 minutes at a time. The kids found out I have a new game and decided to get sick. Both of them.

You level up by gaining XP from quests
Leveling up gives 1 skill point, but you can also gain skill points from "places of power" found at question mark locations on the map. Not all question marks on the map are PoP though, just a few I've seen.

Go to character section of menu. Once you select a skill you have to place it in this sort of skill tree thing.
It is an interesting dynamic because you may want to select a skill, but have nowhere to place it.

Do all the side quest that you can, the job board in town will help a lot if you read them and do all the"?" on the map.

Thus far, this game feels like Witcher 2 with Inquisition's open world elements. These developers are so good at creating a fully realized gameworld and coming up with intriguing stories yet they are so bad at designing a game for anyone but the hardcore crowd.

I've been able to hit two of those stones without triggering their guard. the other two I had to fight my way to them

I sort of agree with him, because the complexity of finding, managing, and progressing all of the many resources required to survive, let alone complete a game like this, can be overwhelming for a casual gamer, more of a chore than a fun challenge -- it's tough to enjoy the narrative and environment when you're so busy trying to figure this shite out and stressing about missing something small but potentially game-breaking because you forgot to loot a chest 6 hours ago. I consider myself unapologetically casual and tend to avoid games like this. I never finished Witcher 2, but I am making an honest effort this time.

Look, I really don't care. I've grown past the need to feel special because I can beat a hard video game.
As soon as I gain control of my level 1 witcher, everything else around me is level 2+, there are only like 4 quests that I can find, and I'm still level one. I go to this village to kill a wraith and when I get to the last step, the game tells me I should prepare, use potions, and enhancements but the game doesn't do anything to tell me how or where to actually get any of that.
When I get into battle with the wraith which is level 2, I fight it until my sword breaks then it kills me because I can't dodge the attacks due to the game's animation lock.
If there's one thing Kingdoms of Amalur did right that's build a damn good third person action-RPG combat system. More of that please. Less of this Dark Souls wannabe BS.
I don't even hate the franchise. I've played 10 hours of Witcher 1 and only really stopped because I decided just to skip to Witcher 3. This franchise was much better when it was more akin to NWN or Dragon Age than when it tried the more action-oriented route.
I saw this coming long before release, but I got sucked into the hype.

You can sell them once you read them. There are some I am afraid to sell because they are maps, but most the books can be sold.
