Since the warden is keeping people out, I'm ok with him coming to my island.

I think I got 9 last night on a non-tarantula island. I'm ready for a bamboo island now. I'm gonna grind some bells this weekend.

Both of you are cheating with time skip, not just her, just own it. She started a new profile to time hop and find a high price to get you to visit her island and give her tip money and use it to shuttle turnips to the island to make herself money as well. Then she transfers it to her main char and has money without doing any time skip damage to it, since it can impact her villager interactions, not just turnip rot. You are taking advantage of time skip as well to get these prices, you might as well just start buying turnips not on Sunday.
Game is a slow burn game, the time skippers crack me up because they finish the game quickly when it's meant to be a relaxation experience.

Switch just arrived and I have it setup, about to start the game. Is there anything I should do immediately on day one I really should do or I will regret?

I don't think you can start a new island on a new profile. I'm pretty sure only one island per console and apparently it's always been this way and a common complaint

Put a DIY bench on the coast, clam away, make fish bait. Fish only with fish bait, no eggs. I love fishing, this fixes it.

From a first time player on day 2 myself, pickup all the tree branches and rocks you can, shake trees for more, after you sleep and it synchs to real time go talk to Tom nook in his tent next to his workbench in his tent and donate ,2-3 things to him asap to get the axe recipe.
Sell every critter or fish you caught, and weeds are also an easy first bells getter.
That's pretty good starting advice from a brand new player, enjoy it it's really great so far and I just started

you are right, being new doesnt stop anyone from time hopping to find the good price though. You can start that as soon as you get the cranny. Easy way to get a lot of cash immediately is to get tips from turnip sellers.

Best way to enjoy the game, I love the fishing. Just a relaxing experience. No need to rush a lot of bells and upgrades.
Thing I am trying to resist is using my amiibo spoofer to get the villagers I want. I may get a few. I am going to keep my original 5 at least.
