I’m sure this has been asked but what’s your favorite noodle. I’ve always used spaghetti noodles thinking of using Penne for the saints game.

I like the spaghetti noodles that are a little bigger than regular spaghetti noodles but they getting harder find. Anything but egg noodles works. You'll be fine using Penne, I've used it before.

I for one, cannot get into pastalya. I don’t know why but, every time I try it I find it just okay. However, use rice, I am all over it. Not sure if it is a texture issue or more dense carbs per bite but I wish I liked it as much as with rice.

Man, I was just thinking about cooking some for the saints game but I’ve neved done it. Anyone got a recipe- mostly regarding the water ratio

Admitedly I've never made Pastalaya however, I think bucatini would be a great noodle to use because it is a long hollow tube that works great in cream sauces.

120 fluid ounces of water to 60 ounces of pasta, for example.

Cook down your veggies for a while, brown chicken and sausage or pork or whatever meat you like. Add to the cooked down veggies. Add your water and chicken base. Bring up to a boil. When at a boil, add your pasta, turn your heat to low, put on lid, and let sit for 30min. Turn off heat and remove lid and let it cool down for a bit.

Edit: add whatever seasonings throughout the process that you like. I used cajun seasoning and red pepper flakes on chicken and garlic salt and pepper for veggies.

The Jambalaya Calculator has a tab for pastalaya. Generally, most people use between 1 and 1.5 quarts of liquid to a lb of pasta.

Penne for me. I’ve made pastlaya since the 90’s.


They always have it at Sam’s, where I get all my jambalaya stuff.

I would think it’s to big. But it sure is mighty fine in a rocky and carlo’s Mac and cheese.

I made some with Orzo and it was fantastic
