When I was working at Giamonco's, Greg Giamonco almost kiced my arse for putting mayo on the bottom bun and mustard on the top bun. And rightfully so.

ETA: as far as the cheese, only communists put cheese on their burger.

It goes under the meat to serve as a barrier for juice that would otherwise sog up the bottom bun, rendering it useless.

This reminds me of the line my grandmother had for ignorance when it came to eating, cooking, prepping food....

My superior burger prep style eliminates the soggy bottom bun.

It also puts the crunch factor on your bottom teeth. 4/5 dentists say crunchy foods are much more enjoyable and much safer when crunched by the bottom teeth.
