Thai/Vietnamese.
I love Mexican, Mediterranean, etc., but I’d get tired of them a lot faster if I had to eat them every day.

I could eat Mexican every day but I don't want to be 300 lbs so I couldn't do that
I'd probably do Japanese. There is enough variety there to where I don't think I'd get bored and could eat healthy enough.

Southern American food. Burning off those calories with work or exercise would have to be a priority if you want to live past 60.

Whatever cuisine encompasses Gulf Coast seafood (especially all the LA dishes) and TX BBQ. Think I'm good.

Charcuterie and Cheese is my favorite thing to snack on
They have lots of different breads both sweet and savory
For lunch you'd have a variety of sandwiches, croque monsieur, jambon beurre, croque madame, pate and cornichons, tartines, saucisson sec, etc..
For dinner entrees you have traditional things like Beef Bourguignon, Coq au vin, Steak frites, Bouillabaisse, Cassoulet etc... Tons of different sauces to accompany proteins.
And not to mention the wine...
