Wondra flour

Wondra flour is in a blue cylinder near the rest of the flour in your grocery store. It's par-cooked and sifted. In contrast to raw flour, it doesn't need to be cooked. I use it for white gravy mostly, but it thickens dark gravies too. When I make my best poultry gravy, I use this to make my beurre manie. This has been a public service announcement.

Yes it’s a pantry staple for me but I just really discovered it this year.

I like to use it, instead of AP flour, for dredging. Seems to make products crispier.
