You don't want chicken 3 days past the sell by.

Smell test, if none, smoke em.

Sell by is not use by.
At some point you have to start thinking for yourself and stop asking others.

Yep. I've thrown out chicken before the sell by date. If it smells bad raw, it's not going to smell any better cooked. Trust us.

There was a debate when I was in college about this. The chicken was clearly bad when it was opene and stunk. Someone cooked it and it did not smell bad after it was cooked.
I don’t remember if anyone actually tried it.

How much time to stores bake in for using after their sell by date?

To each his own, but I’d toss them. They might end up being fine, but a few bucks isn’t worth 24-36 hours of vomiting and diarrhea.

I'd smell them. Like others said if they smell fine, they're fine.

There are no regulations for number of days, so it just depends. You can always figure a couple of days. Sometimes it may be longer.
There are always exceptions. You may get meat that goes bad before the sell by date, depending on a number of factors, but it’s not common.

A little bit of smell is just added probiotics.

It’s mostly store policy possibly based on when they thawed it or other factors. It’s just a guideline. Even expiration dates are something of a guesstimate erring on the safe side. Things aren’t necessarily bad because that date says they are expired.
Wish I had a nickel for every time my wife worries that something’s expired when it’s perfectly fine.

If it smells like farts, don't eat it.

Raw chicken is easy to tell whether they can be eaten or not.
Smelly and/or slimy, throw out.
Neither of the above, cook em up.
