Given your best baked wing recipe

My best wings aren't baked. They're smoked then flash fried.
But for the oven, wet them with apple juice, season them with Plowboy's Poultry Rub and bake at 375. While that is baking, pour a 10oz bottle of Tiger Sauce into a small pot. Add a 10oz jar of Tobasco Pepper Jelly (red jar for a little pick, green jar for mild). Warm the mixture on your stove, stirring occasionally to melt the jelly.
When the wings are baked, take them out and one-by-one drop into the pot of sauce flipping it over to fully coat. Do each wing, placing them back in the pan they baked in (you should use a rack in a pan when baking then finishing wings). Bump the oven to 450 and put the wings in long enough to set the sauce.

Sorry to detour the thread, but tell me more about the smoked / flash-fried wings.

Smoke at 250 for an hour using oak. Wings will be 90% done. Fry at 375 for ~5 minutes. Remove. Sauce with your fav. Back on smoker for 10 minutes. Done.

Prep wings w/ rub of: salt, black pepper, garlic powder and paprika
Grill wings
After initial sear (2 turns), baste before and after turn w/ basting sauce of
Butter
Lemon
Lea & Perrins
Louisiana Hot Sauce
Salt
Black Pepper
Garlic Powder
Tony's
Grill until done

Season lightly with salt and baking powder and bake at 250 for 30 minutes. Turn up heat to 425 and bake 30-40 minutes. I got this method off another site and it works.

Hail J. Kenji. Great recipe but I go 3:1 hot sauce-butter instead of the 1:1 which is way too buttery.

Any flour/coating prior to frying? I’ve been curious about how people smoke and fry their wings

I boil for 9 min with red pepper seasoning. Then place in the broiler till crispy. Brush with wing sauce. Flip. Crisp. Brush.

Yeah, I go simple as well. Oven for an hr or so on a raised rack with salt & cayenne, go do something else while it cooks. Pour sauce over afterwards and let it cool off a bit.
I'll have to try smoking when the smoker is going for other things.

Boil, allow to air dry in the fridge, then bake.
