You can get pretty good salsa in the refrigerated section in Brookshires and Kroger. I imagine it has a lot to do with shelf life because once it is opened it does not last long.

I don't really think it's terrible - it's just a different product than fresh salsa.

When you can it, you have to heat process it so the flavor is different.

so if preserving is the problem, why not take fresh salsa and jar it in the old school mason jar method? it would be good on the shelf for a year i would imagine

I buy salsa in pint containers from my neighborhood Mexi-Mart here in suburban Atlanta.
