Not familiar with seafood markets IN NOLA but if a short drive isn't ruled out, can try:

Schaefers in Bucktown almost always has red snapper.

Langenstien's on Metairie Road and Dorignac's have it pretty often but not all of the time. When they do have it it is always nice and fresh.
