Where is best place in BR to purchase a 30 or 40 pound pig to cook in a Cajun microwave?

i got my thanksgiving pig from BRQ. it was perfect, right at 50#'s, super clean and came out great after 6hrs in the box. whoever butchered it left the kidneys intact which was a nice (tasty) bonus.

Scallans on Airline in NBR has them but you need to reserve it soon. I would recommend getting it injected.

Thank you. This is where I went with. The other places only had 50-80 pound hogs, I'm just cooking in a Cajun Microwave and Scallans had a 35#! Reserved to be picked up on 23 December.

For future reference, you can order a pig at any AG grocery store. Give them a week or two notice and they can get it in.

Post here the next time you need one , I am currently trying to exterminate every pig in central Louisiana . All my friends freezers are full of pork .

Scallan's Choice Meats did not disappoint! The pig was clean as a whistle, not one hair on it! The butcher perfectly butterflied it for me. Reasonably priced and was ready for pick up on the day I requested. In the past I have had a local guy, in Watson slaughter a pig for me but it was filthy and smelled bad which in turn made it taste bad to me. I will certainly use these guys again. It came out wonderful and was eaten up by our Christmas Eve guest.

I went to a restaurant supply store(Ducotes Florida@ Foster in Baton Rouge) and got a couple of food safe stainless oven racks 20" X 15" and secured them together with (4 ea) 2 1/4" S hooks. Works really well!The 20 X 15 inch racks were great for a 35# pig but obviously would need a bigger size for an over 40ish pound hog.

I may be remembering wrong but I believe they leave the kidneys in for inspection.

We have used Scallan's for many years. The place is often over looked because of it's location. Never had a bad pig from Scallan's.
