It's not so much that - Just that those grey burgers you sometimes get are usually a product of overworking the meat. So when people put 15 thing into their meat, you know there's a lot of mushing going on in there. Meaning there's a higher chance of grey/dense and not as juicy or falling apart.

I Ike to add some bison to my ground chuck. Like about a 1:2 or 1:3 ratio. Also, I love roasted, peeled, seeded poblano/hatch/Anaheim peppers as a topper.

We use the meatloaf from Benoit’s in Addis to make burgers

50% ground beef and 50% lamb with Tzatziki, lettuce and tomato on whole wheat bun.
The Breslin in NY serves one similar and it's very good, especially on the grill.

Just a little Liquid Smoke gives it a great flavor. Burger King does this too.
