What's the best kind of green in your opinion?

Besides that icky. I think I prefer the collard. Harder to get tender, but damn they got some flavor. My grandma is one of the best cooks I know. She won't cook a collard and uses racially slurs to describe them. I've got a pot of collards and smoked turkey necks ginning right now

I'd have to have them side by side to choose. I smother them so heavily with hock/bacon fat, onion. garlic, seasoning, and broth that they're all fantastic.

I prefer collard greens. I always cut out the stem and use my dad's tip to add a bunch of spinach to the pot to mellow them out a bit. I also add red onion, tons of garlic, smoked ham hocks and a little pickle juice.

I grow a garden at school with my special Ed kids. The janitor told me that the greens on broccoli plant are great when smothered down with Tasso. I still haven't tried it, but every year he can't wait for us to harvest the broccoli so he can get at the greens.

I love collard greens if I'm cooking them traditional Southern greens style with a fat.
If I'm going a simple braised greens, then I like kale or spinach.

Beet greens are really good as well, but they do stain everything red.

What isn't?
I'm going with collards, but I've never turned any of them away. It's been about a week since I've had a batch, and those were from a restaurant. I may have to make that happen this week.

+1 on beet greens. I was practically a professional beet farmer last year and has plenty.
