Did a large brisket my hot temp way yesterday and it came out great. I was fixing my boat so I didn't pay a lot of attention to it . It had less than a. Half an inch smoke ring
But real tender. Making some Burt ends out of The point today then some wings..

Brisket went on at 9:30 room temp and it was done to 199 at 5pm. Let it sit in the shut down BGE until 6:30. Prolly a 11-12 lb?

Just one rack of ribs today, but have a whole pork shoulder cut up and marinating for am pastor tacos. Will just put that in the oven though.

Just finished our meal. I never remember to take pics for these threads.


I smoked a 9 pound butt yesterday . Injected, seasoned and smoked with cherry/hickory


Also threw some beans on the smoker and made a green chili mac and cheese.

Did a brisket yesterday and tried Burt ends today, just sampled one and they are awesome. Wish I would have turned the point into these instead of just for beans.
I found a sauce recipe that called for cola reduction, didn't have one so I did Ginger beer, worked fine

I like how the meat really traps all the smoke below the grating.

Gets the most out of the wood pellets.

I like how you got the meat fibers to seperate out like that and really let the smoke flavor in.

16 lb. brisket. Took 19 hours to reach peak temp of 203. Wrapped it, put it in a cooler. Pulled it out 3.5 hours later. Still hot, juicy and barky.
