Been debating all week. For right now:

Whole chicken and Jalapeño poppers on the smoker with some baked beans other sides

Fish fry sounds good though.

My wife’s boss is having a Bourbon tasting. He is a UK grad, starts at 2 so I should be primed to get wasted by halftime of the AU debacle. They are serving heavy Hors Douvres. He mentioned a Hot Brown Pizza I am sceptic about the whole damn thing. I offered to pick him up some Weller 107 a couple weeks back he said he didnt care for it. I will be shocked if any of the bourbon is worth a damn.

Catfish courtbouillon. I caught a 15 lb. channel cat and skinned it out to cook whole, but that damn thing is so thick I decided to filet the meat off the backbone so it will cook more evenly.

Can't wait to get that going and stink up the house real good.

Seafood gumbo. Got about 5 lbs of shrimp (will only use about 2), going pick up some crab meat today, and have a couple lbs of andouille. It's the easiest of the gumbos.

Catfish is only good for frying, IMO. Especially a big channel mudcat. I'm also spoiled in the fact that my dad only fishes for sacalait, so that's the only freshwater fish I've eaten in the last 3-4 years or so.

You are correct. I just call most large catfish a mudcat, because I think they taste dirty after a certain size. Just my opinion on the matter.

Love a good seafood gumbo myself. I add some of those small scallops (bay scallops) to my gumbo just like you would if adding fresh oysters. They don't take long to cook and add just a bit of a different texture.

Jambalaya balls is a ball of jambalaya dredged in flour then egg wash then flour again. You can drop them in the dryer frozen already prepped and dredged. Very easy.

ETA: they are good to make when you have leftover jambalaya. You can keep them frozen for a while too.
