What to do with plantains??

Wait til they ripen. They're ripe when they're almost entirely black. Slice somewhat thin at an angle and fry. Sprinkle salt or cinnamon and brown sugar on them.

You don't have to fry them very long. The texture is really good and you get these nice crispy/chewy edges.

Mexican/Salvadoran place in Dallas has served fried plantains for years. They are pretty good but very "rich".

I love plantains. Part of the banana family, they are a delicacy.

Don't when get me started about plums with red on the inside, and a nicely ripened avacado.

Depends on the type, ripe (maduros) or unripe (tostones). Aranitas are always good when you have unripe ones. If you want to get creative and make a mofongo like someone else suggested those are great too. Marrying a Puerto Rican/Cuban you learn all about plantains.
