What to do with a bounty of Kumquats

I am coming home with a large harvest of kumquats. I figured I’d do a batch of candied kumquats, but would be curious as to what others have made and liked.

Maybe infuse some vodka with them. Lots of recipes online for that.

Kumquat curd? I haven’t tried any or made any, but lemon curd is delicious, so why not kumquats?

Chicken tighs, kumquats, red onion and basil leaves is exceptionally good. There are several recipes online. Here is one...

It's good when replacing the chicken with country-style pork ribs.

A good friend of mine used to slice thinly and add to a sweet and sour pork dish. Phenomenal. Unfortunately, I never got the recipe and he's no longer with us.

I enjoy a good kumquat marmalade.

A few years back, I made several batches of kumquat marmalade.

I use it when I make an Old Fashion and often put some in a meat dish while cooking.
I have 2 kumquat bushes that are over 20 years old and usually get at least 4 or 5 gallons from each bush. But in the fall of 2020 [after hurricane Laura] the squirrels ate almost all of them. Last year the squirrels did not eat them????

The Christmas freeze badly damaged one bush, but other bush is growing just like normal. It should have a good crop.
