Yorkshire pudding is traditional, I prefer potatoes(roasted, mashed, bsked) and a green (spinach Madeline would be my favorite)

And a green of some kind.

My sides when I do a rib roast:
creamed spinach
potatoes au gratin
haricots verts amandine or grilled asparagus
roasted carrots, cauliflower, or brussel sprouts

Get some fresh horseradish and make a little sauce. The other ideas are good. Something potato and a dark green veggie.
