What should I make with chicken thighs?

It's too rainy to smoke them today or tomorrow and I dont cook with them often. What are other options?

Chicken enchiladas/tacos/nachos/quesadillas/fajitas (whatever if your preferred version of Mexican grub)
Chicken tortilla soup
If bone-in, they're awesome braised in a Dutch oven with a mustard/wine/caper type sauce.
These garlic-honey cast iron thighs are delicious and very easy. Also best for bone-in.
White chicken chili
Fried chicken sandwich, pickle brined like CFA. I believe Kenji has a recipe for this up on Serious Eats
Chicken tenders
As far as pastas go, chicken is good with pesto-alfredo style sauce

Think you covered everything I was gonna suggest
For the Mexican dishes I’ll just brown a few thighs in the Dutch oven, add half a bottle of Goya marinade, and let simmer for an hour or so. Pull the chicken and insert into your preferred tortilla with all the fixins

Make a chicken gravy out of them.
Season them, dust with flour, brown them in a little oil, take them out, add some diced onions and brown them down real good, add your chicken back with a little water and smother them till they tender. Serve over rice.

Was planning to smoke some chicken this week as well. Will end up baking it instead. But I'll be doing alfredo pasta, tacos, and chicken salad with it throughout the week.
