Myself, I would rather leave that out and use more bacon and sausage. My family likes the ground beef in it though.

I mean, they’re prepared exactly the same way as I would prepare “red” beans and rice, with sausage and ham hocks/tasso and served over rice. Exactly the response I would expect from you, though.

I tried Kroger one time. Not as good as Camelia. I think they were old.

Camelia Red Kidney beans almost exclusively. I do remember a time I was up in Indiana and the people I was visiting with asked me to cook them a meal of "Original N.O. Red Beans & Rice" and I went to their local market and bought a 2 lb. bag of red kidney beans----a brand I had never heard of.

I did my normal cook time and they were still fairly hard so I had to cook them an extra 1 1/2 hours to get them to soften up enough to get creamy. I just figured the beans sat on the store shelf WAY longer up there than any similar beans would have down in N.O.

Apparently it's a pretty big "terroir"

"Camellia sources its beans from all over the U. S., and at times Canada if needed, and Vince explained that edible beans aren’t typically grown in humid areas such as Louisiana."

I order mine online, but Whole Foods here carries them.
