What is the origin of Louisiana Hot Sausage

We all know this amazing local treat is not just spicy smoked sausage and it tastes completely different than andouille. A bunch of local butchers used to make their own pre-Katrina but it is still readily available. Curious if anyone has any insight into the origins?

As for the origins, I think Louisiana smoked sausage probably derives from French chaurice or German sausages.

Hot sausage, or smoked sausage? These are two completely different things to me. Hot sausage is a fresh, uncooked sausage; smoke sausage is obviously smoke cured...

All I know is when my grandfather owned his grocery (a long time ago) all the old funky meat was ground up and spiced to be sold as hot sausage.

There's a company called Farmer John here in California that actually makes a good Louisiana Hot Sausage. I get them at my local Costco.

I don't guess I know what hot sausage is. I know what hot links are. And hot smoked sausage. What is hot sausage?

Hot sausage Po boys are the shite. Not sure how it started but it's the best sausage for a sandwhich. The spicy flat patty blends perfect with some Mayo. It's quite unique as fast as sausage goes.

Most of the time its just ground pork with a lot of seasoning and out the casing. Patton was one of the famous makers of it in NOLA. Not really popular on the bayou as it was in NOLA.

I used to go out to Taaffe’s in Chalmette for hot sausage, but that place is long closed. My dad makes his own, and it’s pretty damn tasty. I’ll have to try to remember to get his recipe to share with the board.
