What do you like in your omelettes?

What do you like in your omelettes? I'm going through an omelette phase right now. I'm simple though. I like mine with bacon, sausage, and lots of cheese.

I've never had an omelette with seafood. I hear they are good.

Hmmm. I never thought about spinach leaves. I love spinach.

Leftover boiled crawfish are great in an omelet.

Bacon, cheese, and jalapeños is the go-to. I'm having one tonight. I like mushrooms in there too but don't have any on hand.

Asparagus, prosciutto, pesto, roasted red peppers, sautéed squash, mushrooms, crabmeat, lobster, shrimp, pancetta, roasted garlic

Simple:
Cheese & fresh spinach leaves

More complicated:
Cheese, sausage, (cubed) hash browns, sometimes black olives, mushrooms, or onions.

Seafood (shrimp, crab, and/or crawfish) + onion & bell pepper is a good combination too.

I need to try jalapeños. I love them, but I've never had them in an omelette.

I'm not a fan of onions in my omelette. I stick with meat and cheese and cook potatoes on the side.

You guys are giving me good ideas.

I like to keep it healthy. Cheese, onions, celery, and bell pepper would suit me just fine.

A friend of mine from Jennings always puts rice in her scrambled eggs. I've never had it, but she swears by it. I'm not sure what the effect is, though.

Onions and potatoes are about as far out as I go and not too often. Usually, it's just chives or green onions, but I don't eat them often. I'd just as soon have scrambled eggs with the same ingredients.
