what do i cook with marinated chicken breasts?

i have 5 marinated chicken breasts that i need to cook. what is something i can cook with these? i don't wish to cook the "normal" dishes. but, i don't want something to extravagant. i don't want to do fajitas or chicken spaghetti. what else do you recommend?

note- they are just skinless breasts.

Zea's roasted corn grits. From start to finish these take about 30 minutes. I boil frozen extra sweet corn on the cob then char it on the grill for a few minutes.

Ingredients:

2 cups chicken broth
2 cups heavy cream
¼ stick butter
1 cup golden corn
1 cup yellow grits ( not instant)
Green onions for garnish

Instructions:

1. To grill corn, shuck off husk. Lightly better corn cob and grill over charcoal or open fire until slightly blackened.

2. Cool corn and cut kernels from cob with sharp knife.

3. Bring chicken broth to a boil. Add heavy cream and return to boil.

4. Slowly whisk in the grits and then the corn.

5. Reduce heat to a simmer and cook 5 to 6 minutes.

6. Add salt and pepper to taste.

7. Garnish with thinly sliced green onions.

Split the breast and stuff them with Swiss cheese and spinach. Roll them up and wrap with bacon. Brown on each side then bake. Cover in your favorite sauce and eat

A few suggestions:
--Steamed skinny green beans (haricot verts) with a little lemon butter
--oven roasted potatoes: cut small red potatoes into chunks, toss w/EVOO and garlic, roast at 425 for 45 mins or until tender on inside, crispy on outside
--sauteed spinach & mushrooms w/onion & bacon
--a tomato & feta salad, or a watermelon or peach and feta salad, dressed w/lemon & EVOO.
--succotash: corn, baby green limas, onion, bacon, okra (or not), tomato; or the cajun version, macque choux.

I don't think he's talking about side dishes. He wants to know what to cook using the chicken.

this. i'll add sides accordingly. i have 3 people to feed.

i don't have any fancy shite on this rig. so......just your basic kitchen items.

Chicken bombs,

Slice the breast into strips, roll with bacon and jalapenos and toss on the grill. On the side make a lemon butter dipping sauce.

I like to do an Alice Springs Chicken (Outback) copy cat. It’s not healthy by any stretch, but damn it’s good

If you don't want to do chicken spaghetti, you're limiting the options of lemon and butter sauce with spaghetti, vodka sauce, which you could make with a jar of spaghetti sauce, cream and and a little vodka, alfredo which is butter, parmesan and pasta water, or chicken with garlic and oil and parmesan cheese.

You can always throw in some smoked sausage or tasso with the chicken, add some onion, celery, bell pepper and make a small sauce picante.

But I think the easiest option is pasta. Just about any vegetable you have, if it's frozen or canned can be sautéed with onion and garlic and mixed with the chicken and spaghetti.

You can pound those breasts to an even thickness and broil 'em...

Or take the pounded breasts and do a quick dip into egg wash & coat with panko (japanese bread crumbs, even WalMart sells 'em)...bake until done (375-400 degrees for 15 minutes). Voila, oven fried chicken. Bonus points if you season the panko.

Or "smother" them: cut up a couple of onions, a green pepper & saute in butter in a skillet until onion is browned. Turn up the heat a bit, add the breasts & sear/brown on one side, then turn them over and add about 3/4 cup of liquid (chicken broth is good, a little broth & white wine or even a little beer is also good). Scrape up the browned bits of onion, etc, add some chopped garlic, then reduce heat to low. Simmer (barely bubbling) for about 20-25 minutes, adding a little water if needed to keep the pan from cooking dry. You can add sliced mushrooms, if you'd like, when you add the liquid.

Or do a chicken version of pepper steak: cut chicken into strips, get a pan very hot, and add some oil. Quickly stir fry w/green pepper strips, onions cut into strips, and maybe some carrots cut into sticks, along w/chopped garlic & fresh chopped ginger if you've got it. It will cook in less than 7 minutes, so you'll want to have everything else ready to go beforehand (like a big pot of rice).
