I add potatoes at the beginning so they cook all the way through, corn when I cut the fire.

You're going to have some raw potatoes if you do that

Corn is fine to add when you cut the fire off, potatoes probably need between 5-10 minutes of boiling time to be cooked.

Ill parboil them before hand, just trying to keep the potatoes from getting to spicy.

I don't feel like potatoes typically soak up as much spice as other additions (such as corn), even if the potatoes are cooked/soaked for the entire time.

My favorite is Swamp Fire, which I think is an Oak Grove product, but it's been increasingly hard to find.

My options in Huntsville are limited so I usually go with LA powder and liquid. I'm going to try zats pro-boil again this year.

Also, for the potato question, you want to add your potatoes to cold water and let them heat up with the pot to keep a good consistency.

NolaGT and I discussed this the other day...forget what thread. I've used the herb one twice already and I like it. I'm boiling tomorrow and wanted to try the garlic but couldn't find it so I'll be using the herb again.

3/4 jar of zatarains pro boil
16oz zatarains liquid
4 bags zatarains extra spicy bags
Sometimes salt, sometimes not
And 16oz bottle of zatarains lemon liquid after I cut the fire

I threw all three in my last boil. I usually toss a thing of onion powder and garlic powder with my cajun fire. Used the boosters instead and it basic tasted the same

Tomorrow I’m doing the zesty citrus and the herbal overload.

I have used the zesty citrus and the smashed garlic. Loved it. I typically use quite a bit of fresh citrus and when I used the boil boosters and didn’t add any fresh citrus. Got some more for this weekend. I added one bag of each to my normal seasoning which is 1 bag of swamp dust, 1 8oz bottle of Zats liquid, and half a sack size jar of Zats Extra spicy.
