Oven cooked a pork roast, cooked a pot of red beans, some rice, gravy, made a salad and cooked a pan of corn bread. :)

Decided to change it up a little and make calzones instead of pizza. They tasted good, but needed more cheese and my technique left much to be desired. Not the best looking.
- Spinach, sundried tomato, mushroom, Canadian bacon, ricotta, mozzarella.
- Meatball, bell pepper, red onion, red sauce, ricotta, mozzarella.
- Sensation salads

A teacher to me once said, "TulaneLSU, you're smart, but you'll never amount to anything because you don't know anything." She's probably right and tonight was more support for her prediction.

Inspired by the always eloquent fr33manator's legendary Stuffed Gator Tail thread, I endeavored to approach something worthy of his creation. I had two pork tenderloins, each about two pounds, which cost $8 at Sam's last week.

I began by removing some of the silver skin and filleting it before pounding it to 1/2" thickness to open a canvas for the filling.



While I was busy doing that, I had a pound of hickory smoked bacon from Sam's ($10 for three pounds) in the oven, which I baked until crisp.



Into the pocket of meat I smeared some cream cheese, sprinkled freshly grate sharp aged cheddar from Oregon, stuffed three chopped jalapenos from a neighbor's garden, and layered five slices of that bacon. I rolled it and using my best surgeon's knot attempted to keep it together. My knot tying and my profuse sweating under pressure, which always clouded my goggles, are two of the big reasons I had to leave medical school and never become a surgeon, much to the anger or disappointment of everyone in my family.



In a Dutch oven made in France, I browned all four sides. My failures were on bright display during this step.



Into the oven at 400 for about 25 minutes the two stuffed tenderloins went.



The finished product tastes well enough, but it looks horrible. My plans to give one to a neighbor are finished. How humiliating.

P.S. That looks like a beautiful slab of farmed raised Salmon from Sam's, the best type there is.

Buddy dropped by some fresh crab meat so crab cakes with a little filet. And yes fries go with everything.
