That pork looks good. I probably wouldn’t pull it. I’d cut off a big piece with lots of bark.

ETA: apparently it’s a thing… I’ve never seen it done.

Both. Rub before...heavy dusting after at finish.

Have you eaten Memphis style dry ribs before? It’s a very good preparation.
