pork chops, marinated with japanese bbq sauce and meatchurch seasoning. Top is holy gospel and the other 3 are honey bacon. plated with mac n cheese and green beans

How long are you smoking? Temperature? Looks really good.

225 degrees for 6 hours. Internal temp was 165. Used hickory wood chips.

It had a little chew to it but was tender. I didn’t want it like a pulled beef sandwich. That temperature takes 185ish to be like a pulled beef sandwich.
It was well done. No pink.

i treat it like a brisket and go to 202-205. It slices and does not pull.

Went out for Italian tonight.

Started with some arancini, then I had spinach ravioli in a mushroom-gorgonzola sauce. Main squeeze had farfalle alla panna.

Tiramisu for dessert, my dude had a limoncello marscapone cake.

Various cocktails because we walked to the restaurant and it was way too freaking hot for wine.
