Last of the green bean juice, old slaw and found a couple of Manchac catfish fillets to throw in the oven. Wife had to work but I saved her one. :)

Top left, assorted dried lentils and beans for a crunchy salad topping.
Top center, pickled or fermented tea leaves with a dressing.
Below the tomatoes are fried onions. Fried garlic is preferred, but I didn’t have any.
On the bottom is just butter lettuces that are chopped up.
I had tea leaf salad at a Burmese restaurant years ago, and I’ve never had an opportunity to have one again. Found out you could buy kits online, so the dried beans, the pickled tea leaves and the dressing come in the kit.

Thank you for that. Very interesting indeed. Top center resembles the barely edible collard greens served at a local hospital, but I get them down, hoping for some degree of good nutrition.
