Not often I cook a $50 steak so I figured I’d take a picture of it. I procured a Raines Farm Waygu Flatiron. Lawd. Made some sauces and ate it on tortillas. Also had some grilled shrimp and Mexican street corn.

From a restaurant or your own doing? The oysters sacks I’ve gotten lately from Avery’s have been fantastic. Haven’t got my hands on any crawfish yet..

Coney Island...only place that has them , I think.

I got a few sacks from CA’s in November. They were fantastic. These are farmed East Coast oysters. Excellent.

Smoked turkey breast off of the pit, apple wood bacon and Swiss with oven fries. :)

Correct. It was more rare, at least in the center where the thermometer was, which registered 125 when it was pulled. But seeing as to how it was shaped like a football, about 1/4” thick on the ends and about 2” in the middle, it yielded variations of doneness suitable for a wide variety of pallets. Like Perm’s mom.

There is nothing in that picture that is medium rare much less rare unless the camera is not showing the true color.
