3 egg omelette with veggies...purple cabbage, asparagus, onion, jalapeño, spinach, ad arugula, with parmigiana and cheddar cheeses.

The yellow plate was a mistake. The omelette was good.

Meatloaf, baked sweet potato, lima beans.

Y’all know I like a neat and pretty plate. Didn’t make one! The struggle is real.

My wife panic bought a bunch of gold and regular sweet potatoes in preparation of last weeks rain storm. Don’t ask me why those, but we have about 5 of each, so I made some oven fries out of a few of them

Seared chops with a pan sauce and roasted sprouts with balsamic to go with them.

Chicken piccata, which I realized halfway through cooking I forgot to bread the chicken in flour (plus I was too lazy to work in batches and crowded the pan). So that’s why it’s not very golden.

Pimento Cheese sandwich.

We are in the middle of canning 68 more pints of green beans. When we get these finished late tonight, we will have close to 100 pints of green beans canned and will be waiting on sweet corn (mid July). I'd like to put maybe 30 - 40 packs of corn cut off the cob for creamed corn in the freezer. Other than that, we will probably put up some peaches when the freestone ones show up. Butter beans and purple hull peas are done, except we might do another bushel of butterbeans later in the season.

Monday I made fried rice, and had some pork and shrimp left over so I defrosted a pack of fish and we had fried fish, shrimp and pork fingers.
