Interesting day today. On the way to the pulmonologist at Emory Midtown, we stopped to eat at the Varsity. While we were eating lunch, a guy driving an American Kidney Foundation truck ran his truck into the building. We thought the building was going to collapse.
On a better note, Pulmonologist said I'm doing well, the blood clots in my lungs have dissolved and no need for further testing at this point. I see the oncologist again Friday.
Leftover redneck lasagna from last night for dinner.

Shrimp Alfredo over zucchini noodles.
ETA: I made keto quiche for our breakfast for the rest of the week, so when it was time to cook dinner I got lazy.
Shrimp and yellow bell peppers cooked in coconut oil over a bed of spinach.

We did breakfast for dinner too! My top secret pancakes, bacon, scrambled eggs, and hash browns.
It is the only meal that my entire family tears up :)

Tried out middle jar tonight (cut pieces - most canned whole).
