I’m assuming a mixture of both.

Did everyone know today is National Taco Day? Yeah I didn’t either until my kid walked in with a big box of tacos from Mestizo’s. And man are they good. With ice tea.

Cheese. 1 cup mozz, 1/2 cup Parm, 1 egg and a tbsp of mayo. Baked for fifteen minutes at 350 before adding cooked toppings and broiling.

ETA: I didn't know about taco day.

Late lunch of blackened grouper topped with sauteed spinach and roasted heirloom tomatoes. Then made it to mass.

Another night of chemo, so no dinner tonight.

I'm curious. Is the mayo necessary for structure or just for flavor?

The person who created the recipe says one egg, but it didn't seem to be enough to bind things and rather than trying to add a second egg, I added mayo (which can be an egg substitute in some recipes). Your choice.
