Yep. The print is missing some instructions for the first cooking. It should read something like this, after the “first cooking “ ingredients....

“Cover all ingredients with water and bring to a boil, reducing to a steady simmer until the meats are very tender. Strain, cool and separate the meats, and continue reducing the liquid to a few cups. Chill the remaining broth and later skim the lard from the top. Use the broth in the “second cooking”.
