Good neighbor that get's to Venice often just gifted me with 8 lbs of yellowfin tuna loin...we just ate about a pound and a half of awesome sashimi...and some pork chops.

Smoked Chicken wings glazed with a hickory bbq & HOT pepper jelly glaze, side of corn machoux with a touch of sugar to cut the heat of the wings.

You'll need a baking dish with high sides, slice enough onion to cover the bottom of the pan, season both sides of the cheeks with salt and pepper. Then grind up some cumin seed, add a little water to it, pour over the meat. Cover pretty tightly with foil and put into a 350 degree oven for 2 hours, lower to 300 for another 2, total cook time 4 hours, maybe a shade over. Once it's done uncover, skim off the grease, shred the meat and mix everything up you're left with in the baking dish, check your seasoning and go to town.
We recently slaughtered one of our beef cattle and I wanted to keep the head, but I didn't have anywhere to put it in my apt and my parents wouldn't keep it at their house...assholes.
Anywho...if you can't get your hands on a head or beef cheeks or don't like the texture that real barbacoa has, you can make it with beef ribs and a cheap roast that turns out pretty similar. I have a recipe somewhere for that around...if you want it I can post it later.
