Parmesan crusted Tilapia and Salad

Did you know this fish is also called the Jesus Fish? It is the fish common to the Sea of Galilee; the one that James, John, Peter and Andrew fished for. Most likely the ones the small boy had in his basket with loaves of bread that Jesus blessed and fed to the 5000.

I feel lucky that one of my comfort foods is relatively low carb. Smothered okra with shrimp. Air fryer flounder on the side.

Meatloaf, mashed potatoes, green beans.

All of it ready-to-heat from the grocery...we move in just over one week so no more cooking until we land in Knoxville.

I know some on this board consider Tilapia trash fish

Even though it’s good for what it is.

Sorry for being tardy with this post, but the wife and I were out late last night celebrating our fourth wedding anniversary. We ate at Restaurant 1890 on the Square in Granbury TX. I had pan-seared duck breast with smoked corn and sauteed spinach. She had a Filet Mignon with potatoes and green beans. We shared a complimentary bread pudding for dessert.
