Posole rojo in the slow cooker. It's been going since about noon so the pork should be nice and tender.
Available toppings are shredded cabbage, radish slices, fresh cilantro and lime, and cotija cheese. Corn tortillas for dipping/scooping.
As an aside, hominy is extremely difficult to find right now, for whatever reason.
