This afternoon I took about a pound of pulled pork I made over the weekend and put it in a pot to simmer in taco seasoning for tacos. Made some Spanish rice, heated up refried black beans and made guacamole

Chips were on the side to eat with the guacamole.



The pork was super tender and delicious!
Taco had pork, shredded lettuce, diced Roma tomatoes, sour cream, pepperjack cheese and cilantro.



The guacamole was killer delicious!!!!!

Thought no one was having dinner tonight

I had burrito bowls with Mexican rice, chicken, charro beans, onions, cilantro, lime juice , shredded cheese

Brisket enchiladas with Spanish rice. Also had a chopped cucumber with lime ponzu.

I wish my tacos were as good as yours!

Ever start to make one thing and have to pivot, mid-prep? I thought I was going to use rotisserie chicken in a creamy mushroom pasta dish. After getting the onions, peppers and garlic sautéing, I determined that the mushrooms were too far gone. No problem, tacos. But the avocado wasn’t ripe enough and the cilantro was past its prime. I can’t seem to coordinate all the things lately.

So. Chicken tacos of a sort.
