Seared scallops in a lemon-butter-caper sauce
Roasted asparagus
Crispy roasted potatoes
Baguette with butter

Maybe some wine. Definitely some LSU baseball.

This will be my first time ever cooking scallops so fingers crossed!

I love okra and tomatoes MD…. But I can’t make them taste like every good lunch place n the south does it … care to share ?

Okra with tomatoes. I like mine slightly dry.

Tonight I used frozen. Works pretty much the same with frozen or fresh sliced. Added oil to non-stick skillet. added okra, salt and black pepper. Normally get oil from bacon, but didn't tonight, just used vegetable oil. added a small splash of water, a chopped onion, and a lid. cooked on medium heat with lid, stirring occasionally to make sure it doesn't burn or stick. Cook this way for maybe 20-30 minutes until okra is done, then add a peeled and diced tomato. reduce heat slightly and continue cooking with lid to soften the tomato. Taste for salt and pepper and add seasoning if needed.

When I do it with bacon fat, I break the bacon into pieces and add it on top when serving. Sometimes, I will add browned chicken, or shrimp. Just depends on what I want to eat.

For wet, use canned tomato to get more liquid. Or add some water when adding the tomato.

We’ve been camping all week at Big Creek in Soso , Ms and have a had a great time.

Dice up some bacon, fry it up and go from there. Sausage, chicken, shrimp all taste great with okra and tomatoes, I’ve been known to do all four in a big pot.
